Preheat the oven to 350°F. Put coconut oil in a small glass bowl and place in the oven to melt while it’s preheating.
1/4 cup coconut oil
Spray two 6-inch cake pans with avocado oil spray, then line with parchment paper. See Tip #1 above.
In a large bowl, mash the banana until smooth. Add the eggs, and beat with the banana. Then stir in the rest of the wet ingredients: applesauce, Greek yogurt, maple syrup, vanilla extract, and melted coconut oil. Mix until just combined.
1 medium ripe banana, 2 large eggs, 1/2 cup applesauce, 1/2 cup Greek yogurt, 2 Tbs maple syrup, 1 tsp vanilla extract, 1/4 cup coconut oil
In a separate smaller bowl, whisk together the dry ingredients: all-purpose flour, oat flour, baking powder, baking soda, and cinnamon.
3/4 cup all-purpose flour, 1/4 cup oat flour, 1 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp cinnamon
Gently fold the dry ingredients into the wet until just combined (don’t overmix).
Divide the batter evenly between the pans (roughly 1 ½ cups batter in each). Smooth the batter out evenly, and smooth the tops.
Bake for 25-30 minutes, or until a toothpick comes out clean from the center.
Let the cake cool in the pan for 10 minutes. Run a small spatula around the sides of the pans to release the cakes, then invert the cakes upside down onto a cooling rack.
Cool the cakes completely before frosting.
