Walnuts: The Star of This Healthy Candied Walnuts Recipe
Walnuts are considered a superfood and for good reason. They’re full of beneficial nutrients like fiber and healthy omega-3 fats, including alpha-linolenic acid (ALA), that can help prevent heart disease.
They’re also an antioxidant superstar. With antioxidants such as as polyphenols and vitamin E, walnuts help fight inflammation and protect against oxidative stress. They can even help prevent certain cancers (source).
They’re also great for supporting brain function and could possibly lower the risk of neurodegenerative diseases like dementia and Alzheimer’s disease (source).
Want one more reason to eat walnuts? They support gut health by increasing beneficial gut bacteria. According to Hippocrates, “all disease begins in the gut.” So it’s important to take care of your gut, and walnuts can help!

Maple Syrup: A Natural Sweetener for Healthy Candied Walnuts
Pure maple syrup offers many health benefits unlike fake syrup that usually contains nasty ingredients like high fructose corn syrup (AND corn syrup), artificial color, artificial flavor, and artificial preservatives.
With 24 different antioxidants in the form of phenolic compounds (source) that can reduce inflammation and ultimately fight inflammatory diseases by protecting cells from DNA damage and mutation (source), pure maple syrup is a powerful ingredient in the world of antioxidants.
It also contains lots of highly beneficial minerals like manganese, zinc, calcium, potassium, iron, and magnesium. You can probably see now why pure maple syrup is one of my favorite natural sweeteners to use in lieu of refined sugar.
Cinnamon: The Super-Spice in This Healthy Candied Walnuts Recipe
This spice has amazing benefits! With some of the highest antioxidant levels of any spice, cinnamon has long been used in holistic and traditional medicine for its healing properties (source). And for good reason!
According to this article: “In addition to being an antioxidant, anti-inflammatory, antidiabetic, antimicrobial, anticancer, lipid-lowering, and cardiovascular-disease-lowering compound, cinnamon has also been reported to have activities against neurological disorders, such as Parkinson’s and Alzheimer’s diseases.”
Wow! Is that impressive or what?!
Cayenne Pepper: A Metabolism-Boosting Kick for Candied Walnuts (optional but worth it)
The capsaicin in cayenne peppers is what gives them their heat. It’s also what aids in digestion by stimulating the nerves in your stomach that produce digestive fluids (source).
Another health benefit of capsaicin include calming inflammation, which may reduce heart-related issues like high blood pressure (source).
And if that wasn’t enough, cayenne pepper can also boost your metabolism a bit, helping you burn a few more calories. Any help we can get with our metabolism is a win. #AmIRight?

Sea Salt: Balancing Flavor + Nutrition in Healthy Candied Walnuts
Yes, even the fine grain sea salt in this homemade granola has health benefits. I told you this recipe is healthy! 😉
With sodium playing an important role in fluid balance, salt can help maintain adequate hydration and blood pressure levels (source).
In addition to sodium, sea salt also contains trace minerals like magnesium, calcium, and potassium unlike traditional table salt (source).
These minerals double as electrolytes which “regulate nerve and muscle function, hydrate the body, balance blood acidity and pressure, and help rebuild damaged tissue” (source).

Equipment Needed to Make This Healthy Candied Walnuts Recipe
You don’t need fancy kitchen gadgets to make this healthy candied walnuts recipe—just a few clean, non-toxic basics. Bonus: cleanup is just as easy as the recipe itself.
- Large non-toxic, non-stick sauté pan – The pan does most of the work here. A good-quality non-toxic, non-stick pan makes it easy to coat the walnuts evenly without burning or sticking. Plus, it wipes clean in seconds—no scrubbing needed.
- Silicone spoon – Heat-resistant and gentle, so it won’t scratch your pan. Silicone is also a dream to wash (no sticky walnut glaze clinging on for dear life).
- Chlorine-free parchment paper – Keeps your candied walnuts from sticking while they cool and harden. And when you’re done? Just toss the parchment and your baking sheet is practically clean already.
- Stainless steel baking sheet – A durable, non-toxic option that holds up to high heat and makes spreading out the walnuts super simple. Since the parchment does the heavy lifting, cleanup is a breeze.
- Airtight glass storage container – Once cooled, store your candied walnuts in glass to keep them crunchy and fresh without worrying about plastic chemicals leaching into your food. A couple of glass mason jars and silicone lids or stainless steel lids with silicone seals (instead of the standard BPA-coated mason jar lids) also work well.
With these few tools, you’ll have everything you need to whip up your new favorite snack in just minutes—with hardly any mess to deal with afterward!

How To Make Healthy Candied Walnuts
This healthy candied walnuts recipe is surprisingly simple and comes together on the stovetop with just a handful of clean ingredients.
The key is taking your time and letting the maple syrup fully caramelize—no rushing, no sticky mess, and no refined sugar required.
Step-by-Step Instructions
Step 1
Combine the walnuts, syrup and spices
In a large non-toxic, non-stick sauté pan over medium heat, add the walnuts along with the maple syrup, cinnamon, and cayenne pepper (if using). Stir well so the nuts are fully coated in the syrup. Hold off on the salt for now—you’ll add it at the end for the best texture.
Step 2
Cook until crystallized
Continue cooking over medium heat, stirring frequently, for about 10–15 minutes. The maple syrup will gradually thicken and eventually crystallize. Stay close and keep stirring to prevent burning. The walnuts are done when the nuts look dry and are no longer sticky.
Step 3
Cool and season
Spread the candied walnuts in a single layer on a stainless steel baking sheet lined with chlorine-free parchment paper. While they’re still warm, sprinkle evenly with the sea salt.
Step 4
Let them set
Allow the walnuts to cool for at least 30 minutes. As they cool, they’ll harden and get perfectly crunchy. Once fully cooled, transfer to an airtight glass container for storage.

These healthy candied walnuts are incredibly versatile and add the perfect crunch and natural sweetness to both sweet and savory dishes.
Once you make a batch, you’ll find yourself reaching for them constantly—sometimes without a plate. Here are a few of the best ways to use them:

- Snack straight from the jar: No explanation needed. This is clean eating at its most honest.
- Charcuterie or snack boards: Pair with cheese, fresh fruit, and crackers for an easy elevated spread.
- Yogurt or oatmeal topping: Sprinkle over Greek yogurt, coconut yogurt, or warm oatmeal for added texture and natural sweetness.
- Dessert upgrade: Use as a topping for ice cream, baked apples, or dairy-free desserts.
- Homemade gifts: Add to gift baskets or package in small glass jars for a thoughtful and healthy treat. More on that below.
Pro tip: Roughly chop the walnuts before sprinkling them over salads or yogurt for better bite distribution. 😉
How To Store + Gift These Healthy Candied Walnuts
Storage
Once completely cooled, store your healthy candied walnuts in an airtight glass container at room temperature. They’ll stay fresh and crunchy for up to 2 weeks (if they last that long without “taste testing”).
For longer storage, you can also keep them in the fridge to extend freshness. But be sure they’re fully sealed to prevent moisture from softening the crunch.
Gifting Ideas
These refined sugar-free candied walnuts make an easy, thoughtful DIY gift—especially during the holidays or as a hostess gift.
Spoon them into a small glass jar or reusable container, add a simple label with some twine, and you’ve got a homemade treat that feels intentional and nourishing.
They’re perfect for:
- Holiday gift baskets
- Host or hostess gifts
- Teacher or neighbor gifts
- A cozy add-on to a homemade salad kit
Pro tip: Make a double batch. One for gifting, one for you. 🤍🌰

FAQs About This Healthy Candied Walnuts Recipe
Got some questions about making this healthy candied walnuts recipe? Hopefully, I have the answer below! If not, feel free to drop your question in the comments below.
Can the walnuts be substituted with another kind of nut?
Yes! Pecans are another option. I would stick with walnuts or pecans though as you want to use a softer nut.
Is the cayenne pepper important?
The cayenne pepper is optional. It adds some depth and a “can’t put my finger on it” goodness factor. But the nuts will still be amazing without it.
My nuts came out sticky. What did I do wrong?
Sticky nuts just need to be cooked longer until they become dry when the maple syrup crystallizes and no liquid syrup remains.

Healthy Candied Walnuts Recipe (Refined Sugar-Free!)
Ingredients
- 4 cups Walnut halves
- 1/2 cup pure Maple Syrup
- 1 tsp ground Cinnamon
- 1/8 tsp ground Cayenne Pepper optional
- 1/4 tsp Salt start with 1/4 tsp and add more if you want them saltier
Instructions
- In a large non-toxic, non-stick sauté pan over medium heat, add the walnuts along with the maple syrup, cinnamon, and cayenne pepper if using. Stir to combine and coat the nuts with the syrup. Do NOT add the salt yet, save it to sprinkle over the nuts when they're done.
- Continue cooking over medium heat, stirring frequently until the maple syrup has thickened and then crystallized with no liquid syrup remaining, roughly 10-15 minutes. The maple syrup will start out runny then gradually get thicker. Keep a close eye at this point to prevent burning, and stir until the syrup becomes dry and the nuts are no longer sticky.
- When done cooking, spread the nuts out on a chlorine-free parchment paper lined stainless steel baking sheet and sprinkle with the sea salt.
- Let cool for roughly 30 minutes or more before storing in an airtight glass storage container.
Notes
- Use a non-toxic, non-stick sauté pan and silicone spoon for easy clean up.
- If they come out sticky, they weren’t cooked long enough.
- Pecans will work in place of walnuts if that’s your preference.
- To Halve the Recipe:
- You can halve the recipe, but… you’ll regret it. Haha!
- If you want to halve it anyway (no judgment), just do a sprinkle of the cayenne pepper if you choose to use it.
- And you may only need to cook the nuts with the maple syrup and spices for 5-10 minutes instead of 10-15 minutes.
